500g beef bones 300g beef brisket 200g flat rice noodles 1 large onion, charred 4cm ginger, charred 2 star anise 1 cinnamon stick 2 tbsp fish sauce Fresh herbs & lime
Instructions (one per line)
Char onion and ginger under broiler until blackened. Blanch bones in boiling water 5 min, rinse well. Simmer bones with spices and charred aromatics 3 hours. Strain broth, season with fish sauce and salt. Cook noodles per package and divide into bowls. Thinly slice brisket and arrange over noodles. Ladle hot broth over. Serve with herbs.
